Sold in one pound tubes, (approximately 85/15-90/10)
What I'm doing is the skinnier cows are labeled as 90/95 and the Steers and cows that are a little more conditioned are being labeled as burger/ 85/90.
Honestly you really can't tell a difference when cooking it. There just might be a little more shine to the 85/90. That's also why I don't offer a price difference like you see in the store. Some have asked for a 80% but unless I add fat from another animal I can't get that from a dairy animal
