Ricotta Meatballs

| 2 | pound | ground beef |
| 1 | cup |
yellow onionfinely chopped, sauteed or 3/4 tsp Onion powder |
| 4 | cloves |
garlic minced Or 3/4 tsp garlic powder |
| 2 | cup | ricotta cheese |
| 1/2 | cup | Parmesan Cheese dried |
| 3 | egg(beaten) | |
| 1/4 | cup | flatleaf parsley dried |
| 3 | teaspoon | dried Italian seasoning crushed between fingertips |
| nutmeg dried, pinch | ||

sea salt and fresh black pepper

Mix everything together, shape into balls at 1 Tbsp or larger. Bake 425 for 18 min.
These are great for making ahead and keeping in the fridge for snacking or freezing for meals.
