Ricotta Meatballs

Ricotta Meatballs

2 pound ground pork
2 pound ground beef
1 cup

yellow onionfinely chopped, sauteed or

3/4 tsp Onion powder

4 cloves

garlic minced 

Or 3/4 tsp garlic powder 

2 cup ricotta cheese
1/2 cup Parmesan Cheese dried
3 egg(beaten)
1/4 cup flatleaf parsley dried
3 teaspoon dried Italian seasoning crushed between fingertips
nutmeg dried, pinch

sea salt and fresh black pepper


Mix everything together, shape into balls at 1 Tbsp or larger. Bake 425 for 18 min.

These are great for making ahead and keeping in the fridge for snacking or freezing for meals.
