
Sweet Corn - Frozen

8 cups corn cut off the cob
1 stick of butter
1 Tbsp salt
2 tsp sugar
1 cups water
I use a wide bottom pot. Put everything together and bring to a simmer.
Stir, cover, simmer, repeat. It doesn't take long. You're just wanting to cook past the raw corn stage. But it doesn't have to be fully cooked. You'll see the color/shine change. If you're doing several batches, then dump into a cake pan or large bowl and start on your next batch. Let it cool, bag, and freeze.
When you're ready to use, thaw in fridge and re heat. Or transfer out of your bag and thaw in microwave.
Tip: to capture that fresh sweet corn taste, its best to pick and freeze your corn the same day.
